Waitrose Celeriac Rice Review

Waitrose’s new Celeriac Rice has only been in stores a few weeks and already it is sold out quicker than it can be replaced. This diced vegetable, which not many of us would usually buy as a whole, is a replacement for rice or in a risotto, or can be added to soups as if a bean or a lentil. The finely chopped pieces have a slightly nutty flavour, which reminds me of toasted almonds but their texture is much softer, much like swede but not as sloppy as rice. The back of the packet suggests sautéing the celeriac rice with onion in butter, which is what I tried. The celeriac lessens slightly in the butter and cooked for long enough, has a slight burnt texture. It works well picking up the richness of the butter.
I also cooked a portion of the celeriac rice as a topping for a salad. I added some sultanas and again added butter to fry them. The two textures of sweetness of the sultanas mixed with the edgy nuttiness of the celeriac work well together and were an excellent accompaniment to a salad.
I would certainly buy the celeriac rice again, and perhaps use it in other dishes such as with curry or chicken. The packet says that the 300g is enough for 2 people, but I found that there was more like enough for 4 especially after you add sultanas or other fruits!
