Mix It! Peanut Butter Nests

Mix It with SKIPPY® Peanut Butter to make these adorable nests and create a fun springtime Easter sweet treat for all the family to enjoy.

Ingredients

  • 190g SKIPPY® Peanut Butter Extra Crunchy
  • 100g sugar
  • 180g golden syrup
  • 240g chow mein noodles
  • Mini chocolate eggs

Method

  1. In a large saucepan over medium heat, combine sugar and golden syrup. Cook 3 to 4 minutes or until sugar is dissolved and mixture begins to bubble. Stir in SKIPPY® Peanut Butter until smooth
  2. Place chow mein noodles in large bowl. Pour peanut butter miixture over noodles, stirring to coat
  3. Shape mixture into 12 nests. Place on waxed paper to cool. Decorate with mini eggs

Blend It and Spread It! Peanut Butter & Jelly Ice Cream Sandwiches

SKIPPY® Peanut Butter and Jelly Ice Cream Sandwiches are perfect for Easter al fresco fun. Seriously they’ll melt, so we recommend you eat them right away – go on Scoff It!

Ingredients

  • 250g SKIPPY® Peanut Butter Extra Smooth
  • 200g sugar
  • 1 large egg, lightly beaten
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 85g jam (your choice of flavour)
  • 300g vanilla ice cream, slightly softened

Method

  • Heat oven to 180°C
  • In a large bowl combine SKIPPY® Peanut Butter, sugar, egg, baking soda and salt until blended. Shape into 1-inch balls and place on parchment paper-lined baking sheet; press with a fork to flatten
  • Bake for 15 minutes
  • Place jam in a small microwave bowl and cook on high for 30 seconds
  • Stir until smooth and leave to cool
  • Stir into ice cream and refrigerate for 2 hours
  • Scoop ice cream mixture into small scoops and place on flat side of half the cookies
  • Sandwich and press with remaining cookies

SKIPPY® Chocolate Covered Peanut Butter Balls

Ingredients

  • 125g SKIPPY® Peanut Butter Extra Smooth
  • 175g butter, divided (see below)
  • 220g icing sugar (sieved)
  • 175g dark chocolate chips (or dark chocolate broken into small pieces)

Method

  1. Line baking sheet with non-stick greaseproof paper
  2. In medium bowl, combine peanut butter and 115g butter; beat together until blended. Gradually stir in sieved sugar
  3. On a chopping board or flat surface, knead peanut butter mixture until smooth
  4. Shape mixture into 54 balls, approx. 2cm each
  5. Arrange balls on baking sheet. Refrigerate 30 minutes
  6. Meanwhile, melt dark chocolate with remaining 60g butter in a glass bowl over a small pan of simmering water on a low heat, stirring occasionally
  7. With two forks, dip balls into chocolate and return to baking sheet
  8. Drizzle leftover chocolate over peanut butter balls
  9. Refrigerate 1 hour or until firm
  10. Store in tightly covered container in refrigerator
