Waffles for Breakfast

We have just returned from our holidays, and one of our favourite parts of being away (other than the sun, the pool and having someone else cook) is always the food available. We were lucky enough to be staying in a wonderful hotel and the choices at breakfast time were immense, but the one thing that the kids went back to again and again was the waffle station! Having fresh waffles, with a massive array of toppings to choose from is every child’s dream, and now we’re back home, they have been hounding me to recreate some of the holiday magic and make breakfast waffles for them at the weekend.

We are lucky enough to have a waffle maker, but the kids’ breakfasts falls to my partner at the weekend – Saturday is my morning to clean the house from top to bottom, and Sunday is my morning of rest! He’s not a chef by any means, and some of his ‘from scratch’ attempts have been hilarious to say the least – we have even ended up with waffle mix down the side of the fridge! We have recently started using a Belgian Waffle Mix to make life that little bit easier. He no longer has to separate eggs or multiply the quantities up or down depending on how hungry the kids are! It’s just a case of weighing the mixture out and adding water and oil – nothing could be easier!

We had a wonderful breakfast last weekend together, we even set up little bowls of treats and toppings for the kids, so they could recreate the holiday atmosphere and add chocolate, sprinkles, fruit and squirty cream to their creations, just like when we were away. It’s a wonderful way to actually enjoy breakfast and a Sunday morning together as a family, whilst we chat about holiday memories and relive some of the fun. The only bit that’s missing is someone to do the washing up…
